David Souder, Ph.D. is a member of the Silver Fern Board of Advisors and Associate Professor of Strategic Management at the University of Connecticut School of Business.

For Silver Fern’s What’s on My Plate Series, David share a recipe from Real Simple that his family like to enjoy: Pasta With Turkey and Broccoli.

The ingredients include:

  • ¾ pound orecchiette
  • 2 cups broccoli florets
  • 3 tablespoons olive oil
  • 1 pound ground turkey
  • 2 cloves garlic, chopped
  • 1 teaspoon fennel seed
  • ½ teaspoon crushed red pepper
  • kosher salt
  • Parmesan, for serving

Dr. Souder says, “Using whole grain pasta makes it even healthier. We like the balance between health and taste. It is a great way to enjoy broccoli because the blend of ground turkey, garlic, red pepper, and olive oil add a lot of flavor. Plus, it warms up great for leftovers!”

This simple dish comes together in 20 minutes and features broccoli, a powerhouse vegetable, along with ground turkey, which can be a great, lean meat option. For full directions and nutrition information, click here.
